A Favorite Breakfast Recipe
Published October 1st, 2006 in L.A. Toddler, Yummy Goodness.I wanted to share a family recipe with you. It’s not original and it might even have a name, but I don’t know what it is. I got it from seeing the movie Moonstruck years ago. However, it’s L.A. Toddler’s favorite breakfast. We made it for her this morning and she gobbled it up like we hadn’t fed her for a week.
I’ll call it Egg n’ Toast. That will be it’s official name. It’s got a title. But, if someone knows what it’s really called, let me know, s’il vous plait.
It’s not just cooking an egg and putting it on top of toast. You’re frying them up together. If your child won’t eat more than “Coco Chocula Berries” in the morning, try it. See if it works for you.
INGREDIENTS:
1 Large Egg, 1 Slice of Wheat Bread, Butter or Margarine, and Salt & Pepper.
That’s it. That’s all you need to make our daughter’s new fave.
DIRECTIONS:
Spread your margarine on both sides of your bread - we use wheat, but any bread your little tyke enjoys… I say, go with it. Using your butter knife, cut a one inch hole in the center of the bread. Pop the buttered wheat bread hole in your mouth and enjoy it’s creamy, rich goodness.
Using a skillet, pre-heat it on high and place your bread down in it. Crack your egg
and drop it in the hole in your bread. Salt and pepper that side of your bread. Allow the bread to turn a light golden brown on that side and flip it over. Add salt and pepper.
You can heat this side to a nice golden toastiness as well. Since Emma is still a wee one, we make sure the yolk is fully cooked (you can usually test with your spatula) but it’s best if the egg inside is over-easy. It allows the yolk to soak into the bread.
And that’s it. Very simple. Usually only takes a few minutes to make and you can make more than one at a time.






We call it “egg in a basket” but I have heard tons of names for it; the Brits call it something cute, but I forget what.
My Mom pulled a fast one on us kids.
She’s fry up a sunny side egg, 2 slices of buttered toast and a couple of strips of bacon.
She’d then break the bread and bacon into smaller bits, put those in a glass then put the egg in making sure to break the yoke and mix together and hand you a fork.
Thus, the Egg-in-a-Glass breakfast treat suitable for sitting in front of the TV for cartoon viewing.
My girls love over-easy eggs and toast, but I never thought to cook them together, so I’ll have to try this.
I’m sure we can come up with some suitable L.A. name for it, like “Eggs Melrose” or “Nicole Richie’s Feast.”
I believe the Brits call it Toad in the Hole. At least that’s what they call it in New Zealand. Yep, you can have Toad in a Hole for breakfast, Bubble and Squeak or a Chip Butty for lunch, Bangers & Mash for dinner. Makes them sound much more fun that they actually taste.
